Hello,
I need some help correctly seeting up my Tax settings so that my international customers see the VAT excluded price on the product pages and in the cart. Currently International customers are only seeing the VAT excluded price at checkout - I need to fix this as I am signing up to an IOSS service very soon.

Currently my price in the pricing section of products is set to the UK VAT inclusive price and not the Ex VAT price.
All is working as expected for UK customers.

I am a little bit confused on what you want to achieve here. Technically, if you want to do IOSS using native Shopify tax engine and have the Include taxes in prices you will have always price inclusive situation.
If you switch off “include ta in prices” and enable IOSS in the Shopify settings you will see the tax exclusive situation in the storefron and in the cart, look at the pics from our test store :

From our expreince non-exclusive situation for EU is not the best setting for storefront/cart. People expect to see VAT inclusive prices in EU. Native Shopify engine works fine with VAT inclusive IOSS orders.
