We are using the free google app which comes with shopify to create our UK based shopping feed and its working no problem. However, if we wanted to advertise our products in different countries - how do we generate the feeds for these? We have international markets and subdomains setup for our store, but within the free app there doesn’t appear to be a way to create different feeds i.e. one for US in USD and one for Europe in Eur.

The correct way is to localize. This means submit a feed in USD. The app you are using does not support this.
So you need to use an app such as: https://apps.shopify.com/multiple-google-shopping-feeds
This app allows you to use USD (assuming you enabled it in shopify > settings > payments)
Make sure that when you submit shipping prices, that it matches the feed, so in this case USD.
