"Shipping methods" and "Instructions" sent via API to our third party fulfiller

Our third party fulfiller is receiving our order information from Shopify online store, and everything is working except for one thing.

They are receiving 2 fields in their online interface:

Shipping methods

and

Instructions

Does anyone know how to NOT send the Shipment Method field to them, but send only the Instructions field?

How is the integration between the fulfilment service and the online store set up, eg: are you using the REST API or the GraphQL API? Are you using a middleware to do any custom data management between Shopify and the fulfilment service?
