What is your view on Recaptcha as implemented by default on all Shopify sites now. Is it good enough? Does it stop spam and will it stop my store email getting harvested?
Or should I use an external plugin or custom code?

I just wanted to share that if you have your email address listed publicly on your website then there is a good chance it is going to be scraped by bots.
Generally speaking, most third party sales channels (Google for example) require an email address, phone number and/or a street address publically available and not hidden on your website to be approved. There isn’t really any way I am aware of to keep that information from being scraped.
I recommend setting up rules in your email manager to help filter out potentially spammy emails or communications that you might receive.
I have had the same issue with a number of client sites.
The reCaptcha that is default-applied by Shopify does absolutely nothing to stop spam emails from coming through.
This has nothing to do with Bots.
