We use a lot of videos on our product pages. And we publish many blog posts with video summaries to help the UX for the post. How can we add video rich snippets on these pages?

Google rarely shows video snippets anymore and the video has to be the primary content on the page. I’d recommend you post the videos on YouTube, label them accurately (title, description), and call it a day. It’s fine if you also want to publish them your product pages to add value to those pages too. You won’t be penalized for posting the same video on YouTube and your website.
