What cookies and/or laws/policies do I need?? I know that there’s like CCPA. GDPR, among others.

If you have customers from the EU, EEA, UK, and Switzerland, then you need to comply with GDPR. The California Consumer Protection Act (CCPA) and California Privacy Rights Act (CPRA) are “extraterritorial”, which means that these laws protect residents of California. Also, beginning in January 2023, covered businesses in Virginia will have new compliance obligations under the Virginia Consumer Data Protection Act (CDPA) in response to the new privacy rights granted to residents of the Commonwealth. Of course, there are other data regulations for other countries, like LGPD for Brazil, etc. We have a dedicated page for all of them here.
Based on the above information, you need an app that will provide you with the proper tools to make your store compliant with these laws.
