Is it just using keywords or is does it go beyond that. Is there things we need to add to the website.

So Google shopping works by extracting keywords from attributes you submit in a data feed within google merchant center. For example the title, description. So if you want specific keywords to be matched, add them in the title and or description.
Other attributes such as categories and product type values also play a role in matching up with search terms.
Basically the more info and attributes you provide the better the results.

Can AI help with identifying how to improve Google search results?
Yes you can use tools and AI research to help, but you still need knowledge to verify everything. For example if I am researching something for coding, I still need to be able to know the coding language, to verify everything is correct. But all in all, yes use all the tools you can to improve every aspect of advertising.

As @EmmanuelFlossie thoroughly explained, you need to add all of your product data to a schema that Google and other search engines can read. This process takes time and involves experience.
