I want to be able to add individual serial numbers for each item I sell to packing slips / invoices. Is there a setting in shopify that does this or an app? I am specifically talking about serial numbers, and not sku numbers which I already have.

Serializer - Product Tracking may be able to help. With the app you can add unique serial numbers or any other custom item information to your sold products. The app also provides a customisable order printing capability. So, the added serial numbers would appear on your printed invoices.
Hey @AndrewG123 you might have already found a solution but in the case you are looking for an elegant solution to this problem along with an integrated inventory and fulfillment workflow you should check SKUSavvy which offers serialized inventory tracking. SKUSavvy enables you to place purchase orders, add serial numbers and print them, then as orders come through you can directly pick from a desired serial number.
You can also enable serial number scanning directly within Shopify POS with the ScanSavvy POS extension which will update back to SKUSavvy to reduce that specific serial number from stock automatically.
