I would like to add the shop email address to the delivery confirmation sent to the customer- that way the shop is also notified the order has been delivered.
I have “simple” theme.

Shopify notification emails don’t have any option for adding CC. But you can subscribe to its webhook for order delivered.
By using webhook you can create sent mail or msg to store.
