Can a shopify staff member see the owner’s credit card info, address, or anything personal regarding the owner?

If your talking about the staff member in your Shopify store, this depends on what you have set in the Users and permissions. (See image below)
NOTE: Shopify Staffs work with Shopify and not to individual Shopify stores.

This is a great question, however depends on if you are referring to staff members of your business, or staff members of Shopify the platform.
When it comes to your business’s staff members, you can set what they have access to. There are a variety of options from full access, to limited, to only certain sections. That being said, there are certain areas where only the account owner has access. This includes adjustments to your plan, and your payout information. To adjust the access staff members have to your store, simply head to Settings > Users and Permissions.
If you are referring to Shopify Support Advisors, this would depend on the situation. A staff member like myself does not have access to your business. However, if you reach out to our live advisors for assistance with your store they will have access. We do have strict accessibility rules. Each time your store is accessed by an internal team member it is documented.
