I want to add shipping over x amount but exclude a certain product. The product I want to exclude is light but bulky and if I were to include this in free shipping I would lose a big chunk of my profit. I’d rather not add another app especially if it costs. I’m only a very small business and everything is adding up.

You can achieve this by creating shipping profiles & set free shipping & flat rate shipping. However, if any customer places an order for products from both the shipping profiles then by default it might show free shipping in the checkout. So, to resolve this you the only workaround will be to use an app like Multi Carrier Shipping Label App. The app allows you to set multiple shipping rules & carry out your entire shipping process seamlessly.
