I’ve come across three apps for Google pixel tracking: Nabu for Google Ads Pixel, Infinite Google ads tracking & GTM, and Google & Youtube. After reading up on them, I noticed that the Infinite Google ads tracking & GTM app offers server-side tracking as well. I’d love to get your opinions on which one is the best. Any recommendations?

As a web analyst and from my past experience Google Tag Manager GTM is the best and recommended way to set up conversion tracking with server side tracking.
you can set up using automated apps but they have limitations of tracking and technical error. While Google Tag Manager is manual process.

server-side tracking with first-party domain / subdomain.
the first 2 can be set up by any other automation apps but for 3rd tracking technology you have to set up manually and only by Google tag Manager.
safari, brave, Mozilla, ad blockers block the 3rd party cookies. so server side is not enough today for accurate data tracking where browser side tracking is dead.
That’s why server side tracking with first-party domain is the latest technology. it can be done only by google Tag Manager GTM .

No, i did not. but few of my clients used to track events. later on they faced issue with tracking.
i did set up with google Tag Manager manually.
Google Tag Manager is free of cost. you don’t need to pay monthly or yearly.
its a lifetime set up.

Do you know of a solution that works for enhanced conversion with the new checkout extensibility update Shopify enforced recently? We are running into a issue with the hashed email data not coming through. We worked with Google to try to get this setup but they don’t have a solution. We tried using the Google & Youtube with no success. Any suggestions?

I am not Google developer. i can not do anything with google and youtube app.
but in terms of Google Tag Manager, I am the master. solving this kind of issue via Google Tag Manager.
My approaches:
connecting GTM with Shopify
create a custom pixel with purchase datalayer
creating recommended variables and triggers
create google ads conversion tags like purchase, add to cart
send user provided data for enhanced ecommerce

This is the best-recommended method to follow.
Using GTM you can enable server side tracking for better accurate tracking. which is data will send from browser and server end.
