In order to update your previous banking information for Shopify Payments, you will need to re-enter the information as an authentication step. If you don’t remember the bank information, we can send a request to our internal team to have this updated for you.

I am trying to change the bank account information, but I have been unable
to remember the old information (routing number and account #). I am
unable to get the money transferred into my bank.

I am having this same issue, I thought I entered my correct bank info but my payouts failed. When go to update the info it says my old info is incorrect. PLEASE HELP.
