How do I contact Shopify support for API and multi-stage system queries?

Since we are currently evaluating Shopify for one of our big customers, I have a number of questions. Unfortunately, since a week I cannot access help.shopify.com What shall I do?

My current questions were:

  1. Can I use the GraphQL API in the Standard Shopify account in order to use Shopify as a headless Shop? Or does this only work in Shopfy Plus?

  2. How can I establish a multi stage system, so that I can have a development and a production enviornment (the better even more [4 stages would be great])
