I am currently using Debut skin. It is simple and barebones. But the blog page is limited. I’m considering subscribing to an app service for blog creation, and I see there are many. However, I’m wondering if one of the paid skins would offer that feature. Any suggestions?

The best way to change blog page layout is to get a theme with a blog page layout design that you like. If you are not able to find any one that you like, then page builder app like Pagefly is a good alternative to design the blog page to your requirement.
The blog page layout doesn’t affect SEO (not directly at least), as another commenter has pointed out. You have the options to set SEO details like Meta Title, Meta Description in Shopify admin with or without any app / paid theme. The only impact I can think of is to be careful if the theme would slow down your sites (Google tend to rank faster sites higher) - but then again there are a thousand other things that could affect your loading speed like your image file size, other apps that you installed etc.
If you want to improve the discoverability of your blog posts, I’d like to recommend my app Blog Posts Articles Filter PRO - which lets you easily create blog posts filter using blog post tag.s It works on most themes, but unfortunately the app doesn’t support any page builder app currently. Love to hear your thoughts if you end up trying it.
