You’re adding the product description at the wrong place. Shopify work on templates so if you’re gonna change one thing then that change will be applied to all the products with that template.
For your problem, what I would suggest you is to add the product description in the Shopify admin products tab and then connect the product description metafield. For reference, see the attached screenshot.
