I am using the Trade theme, and was wondering if there was a way to use a drop down menu for my variants rather then the quick add?

Yes, you can replace the quick add list with a variant picker from Shopify theme customiser on the product page. It will replace the variant table with the dropdown.

How? It does not show it in the add section area.
You can hide ‘Quick order list’ section from Online Store > Themes > Customize > click Home dropdown menu > Products > Default product and add Variant picker block in Product information
