I’ve set up shipping rates for everywhere - Local, Europe, Rest of the world - and when testing out my shop (various browsers, devices and including incognito) and trying to check out an item, the only country available on the drop down list is mine.
Researching the forum, most people experience this problem when not setting up shipping rates, which is not my case. But maybe I’m missing something.
Anything else I should be looking at?

Just to confirm, when you reach checkout are you getting a message that says something along the lines of “there are no available shipping rates for this order”?
One thing I noticed from your screenshot is that in your ‘Rest of the world’ shipping setting it is a weight-based rate. Meaning only that the shipping rate will appear on orders where the total weight of the products in the cart is 0.2kg-0.35kg. This means that if you have products that have no assigned weight to them (0kg) or they combine for over 0.35kg, no rates will display.

Thank you for the quick reply. Good shout re weight on shipping rates as no weight was set up for the item (don’t even know how to do that!). I’ve gone and removed all conditions from shipping rates and tried again but no avail.
I don’t get an error message per se, but rather the only country listed as an option on check out is Portugal.

As for your next issue, you want to ensure your shipping zones include more countries other than ‘Portugal’ in order for more to display. Based on your previous screenshots, it looks like you have added more than one country. The next thing to consider is your ‘shipping profile’. You can learn more about how they work here. With that said, when you create shipping profiles you have the ability to associate which shipping zones (these are the countries you add along with the rates to ship to the zone) and also which products belong in the shipping profile.
I would double-check to ensure that the items you are adding to your cart also are included in the shipping profile(s) that you have set up.

Whilst exploring shipping profiles, I found the problem and it was actually to do with Markets, in that I only had my local market activated. I’ve now activated the international market and all countries showed up!
