Hello, I have 2 languages (Latvian as my main and English as the second /en) running in my shop. I was wondering what language emails are being sent to customers? Because if customers select shop language as an English so he will get those Shopify emails in English language or my original store language (Latvian)?

The email language is English by default, no matter what your store language is. To translate the notifications you have to go to the settings at https://myshopify.com/admin/settings/notifications and change the text directly in the notification templates.
