You can find a list of all shipping carriers currently available via Shopify Shipping on this help page. If you click on a specific shipping carrier link under the In this section heading, you’ll also be able to see the specific shipping services that the carrier offers, where appropriate. This is presented in a table form, as seen below as an example from the Shopify Shipping UPS help page.

There are many shipping carriers merchants can integrate to their Shopify store, so we don’t have a full list of carriers compiled. A merchant can also use a shipping carrier of their choice without there being an integration available to Shopify, so this further broadens the shipping carriers that’s available to be used by stores on Shopify.

I’d be interested to learn more about the use case of your query however – is there a particular reason that you’re wanting to include shipping carrier names on your store?
