Currently, my Search Engine Listing Preview (when searched on a browser) is showing, “Product XYZ - Business Name”
Despite the fact I have changed the Search Engine Listing Preview in the listing to, “Product XYZ | Business Name”
How do I change it so the character “-” is changed to the character “|”?

The issue is likely that google has not yet crawled the webpage, so the changes are not showing up in the search engine. Google will occasionally recrawl pages which will then show the updates in search. However, you are able to request a recrawl to speed this changes up through the Google Search Console

Can you let us know when you originally updated the SEO for your online store? Typically, when you make a change to the SEO of your online store, it is possible for Google to take up to 48-72 hours to reflect the changes made.
I would suggest waiting the full 72 hours to see if the SEO for your online store is updated on Google’s search results. You can also find and submit your sitemap as this will allow Google to index the store and update their search results.
