I have amended my search engine listing preview, yet the description is using the page description rather than the one I have produced. Could someone please clarify why this is happening?

When you make changes to the metadata in your store it is not always picked up by Google, and certainly not always straight away. That is why we advise that you submit your sitemap to Google.
It’s also useful to include the right keywords in your metadata, so here’s how you can look up keywords to help boost your site’s ranking.
