We need to change our domain hosting. We already waited 60 days from the domain registration in order to transfer it. We tranferred it to another shopify store, and we have to wait again 60 days. Meaning the domain transfer will be available again on January 15th, 2022. This was clearly a misunderstanding from my side. Is there a way that we are allowed to transfer our domain before this 60 days? If so, how to proceed?

The 60 day period is imposed by ICANN and can not be bypassed. You will need to wait until 60 days have passed before the domain can be transferred away from Shopify.
That said, transferring a domain between two Shopify stores keeps the same domain provider (Shopify/OpenSRS), so it shouldn’t result in a new 60 day period. If 60 days have passed since the domain was purchased and/or transferred into Shopify, then you should be able to transfer the domain away from Shopify.
