I’m selling sport trips, and this is how I managed my products :
A collection is a trip and an period (three nights in the Castle of Malliac from 22 to 25 july is one, for example).
A product is a room. It has two variants :
One person in the room (for 1290€)
Two persons (for 1790€)
Every room is a different product (as they are uniques).
I need that the whole product to be taken out of stock when any variant is bought.
How can I manage to do that?
Or, would there be a better way to handle the situation?

What you could do is bundle each variant against one of the SKUs.
So in your example you could set these SKUs up:
One person in the room (for 1290€) - SKU ABC
Two persons (for 1790€) - SKU XYZ (but is a bundle of ABC or ABC x 2)
Our bundle app will let you connect up all your products to correct SKUs and we then update their inventory based on the component stock level. So in above example both variants would update if one sells and if you only have 1 stock then would drop to 0. Not sure how you structure the date range part as part of the purchase process so might have to check that.
We also have the additional option of unbundling orders made for a bundled product into the component SKUs post purchase. So if the bundle sells the order changes to the component SKU used for all variants and therefore reduces stock of that item.
