Im going away on Holidays in May but dont want to be accepting orders through my Store as I will be interstate and wont be able to pack them. Can the store be closed as such and put on Holiday Settings so people can still browse items in your store but they cant place an order until it reopens?

Yes, it is very much possible for you to put your store on holiday settings. For that there are 2 ways:-
1.) The first is Password Protect your store. But there is a drawback for this, in this the users will not be able to see the products without password. But that is not your requirement.
So, you can follow the second way which is truly helping you in your problem.
2.) For this you have to activate a plan which is called the Pause and Build plan.
The Pause and Build plan keeps your store online and accessible to visitors, but disables the checkout. You can access your Shopify admin and edit your products or online store, but customers can’t make any purchases. You can pause your store on the Plan page in the Settings section of your Shopify admin. Pausing your store reduces your subscription fee to a certain amount.
For accessing this Pause and Blind plan you have to follow the following steps:-
Steps:1. Log in to your store as the store owner.

From your Shopify admin, click Settings > Plan.

Click Deactivate store > Pause and build plan.

Carefully review the plan details, and then click Switch to Pause and build.
While you’re on the Pause and Build plan, customers can still review your products, but they can’t buy them. To improve your customer experience, you can customize your theme to hide your product prices and hide the Add to cart buttons so that customers don’t try to buy anything while your store is paused.
Your store will be paused and running at for a reduced subscription fee. If you want to start selling products again, then you can reopen your store at any time by choosing a new plan.
For reopening the store, follow following steps:-
Steps:1. Log in to your store as the store owner.

From your Shopify admin, go to Settings > Plan.

Click Pick a plan, and then click Choose plan for the plan that you want.

Carefully review the plan details, and then click Start plan.

I would echo what @Surbhi106 has said and follow the instructions on their link in order to disable checkout, while also making sure the rest of the store is accessible for browsing etc.
It may also be a good idea to announce this change using a banner or pop-up to make sure your customers know what is going on during that time you will not be accepting orders. I have a guide here on how to add an announcement bar like this to your store, I trust this helps - thank you!
